Pairing braised beef ragu, prime rib with truffle mash. load on the truffles for good measure :)

Big, bold & complex, the epitome of Barolo. High tannin, high acid, high alcohol and a long lingering finish. This wine is savory and shows all those classic 'tar' notes along side hints of berry compote and baking spice. This wine is fantastic and is the perfect pair to rich, meaty dishes.

Aromas of underbrush, blue flowers and wild berries form the nose along with a whiff of pipe tobacco. Made with organically grown grapes, the savory, elegantly structured palate delivers raspberry compote, juicy Morello cherry, cinnamon and star anise before finishing on an earthy hint of game. Firm, refined tannins provide support. This will hit its ideal drinking window soon but will still offer great midterm aging potential. Drink 2024–2029. - WE 95

About the Producer
Enrico Rivetto is a farmer at heart and has slowly and strategically stitched together a lush quilt of an estate atop the Lirano hill near the town of Serralunga in Piedmont. Each element of his domain feeds the others. His commitment to truly natural winemaking is apparent in the love with which he speaks about the birds, herbs, moss, worms, and vegetables that grow in and around the concentrated property. Rivetto benefits from having all 23 hectares of his lands (15 of which are vineyards) on the same hilltop, allowing him to care for the vines and react to their needs more efficiently. It has facilitated an intimate familiarity with the behaviors, strengths, and challenges of his vines.

Rivetto's wines have gained considerable international admiration over the last ten years, really taking off in 2011 when his 2006 Barolo was ranked #16 on the Wine Spectator Top 100 list. In 2011 he planted his first Nascetta vines, which has been gaining momentum as an indigenous white varietal in a traditionally Nebbiolo-focused region.

Enrico is very invested in poly farming as a method to naturally stabilize and enrich the vineyard, in turn allowing it to care for itself more sustainably. He remains committed to biodynamic farming and is currently now the first Demeter-certified producer in the zones of Barolo and Barbaresco.
