Winemaking This wine comes from Charles Dufour’s organic vineyard in Landreville, a village in Champagne’s southern Côte des Bar. Classic kimmeridgian chalk soils mingle with heavier clay marls leading to an intermingling of poise and power. This release is a blend of Pinot Noir (60%), Chardonnay (30%), and Pinot Blanc (10%). 80% of the wine comes from the 2019 vintage, 20% comes from vintages as far back as the 1980s now that Charles has disgorged his father’s cellar into his reserve perpetuelle – an ode to the past. He ferments three quarters of his wines in barrel while the remainder ferments in stainless steel. Both primary fermentation and malolactic conversion are done with indigenous microorganisms. After bottling, the wine spends 15 months on lees during secondary fermentation. It was disgorged in January 2022 and sees an extra-brut dosage (<3g/l). No additional SO2 was added. 12% ABV

About the Producer

Charles Dufour is a young grower and winemaker, farming 6 certified organic hectares in Landreville in Côtes des Bars region of the Aube département. Coming from a family steeped in the winemaking traditions of this off the beaten track of a Champagne region, some of the vines were planted by his grandfather and are quite old. Charles favors working with natural yeasts for the fermentations of his wines and the wines are free of added sulphur. Charles has taken an interest in employing Pinot Blanc in his cuvées, with this varietal figuring significantly in his Bulles de Comptoir bottlings. Recently he bottled a single varietal Pinot Blanc from a single vineyard, Le Champs du Clos. Dosage is extremely low as well, sometimes only 2g/liter. The Liqueur de tirage is a blend of his own wine and cane sugar and the yeasts used in the secondary fermentation are derived from his own vineyards. None of his wines are ever fined or filtered.
