Winemaking native yeast fermentation, maturation 100% in French oak new barrels for 18 months. Full malolactic fermentation took place in barrel.
The supple wine is both intense and graceful with an opulent purple color. It swirls with rich aromas and flavors of dense jammy red fruit mixed with blackberry. Those meld with nutmeg, clove, black pepper and insinuations of vanilla bean. The refined, velvety tannins create a succulent mouthfeel with some hints of toast and smoky, sweet oak to the long, luxurious finish. This wine will be charming and fruity in its youth but will surely improve in the cellar.

Just 6 minutes south of St Emilion, UNESCO's world heritage medieval town, in the small hamlet of Genissac, you will find Château Peyfaures – one of the most highly reputed vineyards in the appellation of Bordeaux Supérieur. Nestled among ancient trees and sweeping limestone hills, the vineyard is has been steadily producing premium quality wine for nearly 190 years.
Although it’s an appellation steeped in rigid tradition, Château Peyfaures prides itself on being a resolutely progressive estate with its eye on producing the best the region can offer. Having witnessed seven generations having cared for the estate since 1830, the last in the line.
Winemaking at Château Peyfaures harks back to a time before modern, large-scale productions, favoring instead the techniques used by the countless generations that initially brought fame to the region. Grapes are gently crushed in a traditional basket press to emphasize aromatics and avoid harsh green notes. Because terroir is about more than simply grapes and soil, spontaneous fermentation is encouraged, utilizing the natural, indigenous wild yeast found in the winery rather than adding a culture formulated in a lab. The wines are a product of confidence, the acknowledgment of how little must be done to allow the fruit to shine. Minimal manipulations allow excellent vineyards to show their unique character.
The varied soils on the gentle slopes facing the top sites of Saint Emilion give the resulting wines a layered complexity. There are no exact numbers or timetables for the wines of Château Peyfaures. We prefer to let each wine determine how much oak and time in the cellar is necessary. Nothing is rushed, and each vineyard plot is fermented and aged separately to bring out its optimal character before blending. Each vintage creates variations in the wines’ character, but each bottle is uniquely Château Peyfaures. In keeping with our dedication to the classic style of Bordeaux, we make our wines with a structure and body that can stand the test of time.
