Maceration on the skins for three days, alcoholic fermentation in temperature-controlled stainless tanks. Secondary fermentation for about 60 days in temperature-controlled and pressurized stainless steel tanks. All native yeasts.

Tasting Notes:
Sorbara produces more of a rosé colored Lambrusco (as opposite to some of the other Lambruscos that are deep purple) and is loaded with notes of tangy red fruit and lots of minerality. This wine is refreshing, bright, and ultra gluggable.

This is a classic Aperitivo or Antipasti wine. Pop the bubbly and pair with little nibbles: Olives, toasted bread + olive oil, Parmigiano-Reggiano, assorted nuts & Salumi.  The acidity of the wine will compliment the salty/fatty components of your snacks. Slam dunk.

About the Producer
TL;DR: Paltrinieri is a historic, benchmark producer in the Lambrusco di Sorbara DOC. They've been family run since 1926 and are known for their elegant, nuanced, and focused Lambrusco.

Paltrinieri is located in the heart of the Sorbara DOC by the historic Cru of Cristo di Sorbara. Since 1998, the estate has been run by the fourth generation Alberto Paltrinieri and his wife, Barbara, though the estate was founded in 1926 by Alberto’s grandfather, Achille. Historically the winery, as was the tradition, produced Lambruschi that were blends of grapes. Since Alberto Paltrinieri took the reins of the estate they began, more and more, to focus on monovariety wines from the Lambrusco di Sorbara grape which was gaining more and more recognition for its elegance and complexity compare do the many other Lambrusco varieties. The estate is made up of 17 hectares of vineyards. The Sorbara zone lies between the Panaro and Secchia rivers and the soil is mainly sandy and loose though towards the fringes of the zone there is more clay and there the wines tend to be deeper in color. Their Lambrusco di Sorbara bottlings tend to be dry with light color and crisp acidity.
