This rosé is a blend of both red and white grapes, made with a single fermentation finishing in the bottle for the bubbles (Ancestral Method). It has nice aromatic lift, lots of tart red fruit notes like raspberries, and is just a really refreshing bottle of bubbly! Wild yeast fermentation, no fining, clarity achieved via disgorgement but no filtering.

About the Producer
Juan Sojo and Ángel Luis González studied oenology together and ever since have been making wines together since 2003. Ángel Luis comes from a background in agriculture while Juan comes from a background in chemistry. Both so different, but yet complement each other so well. Together they want to prove their homeland’s winemaking potential and in doing so have recovered one of the region’s forgotten varieties: Eva de los Santos. They have become the only organic wine producers in all of Extremadura and are no converting to biodynamic.
